Herds of sheep, goats, and cattle were relatively easy for government officials to oversee, says Price. Not so pigs, which can live, breed, and be slaughtered quickly in a backyard lot. The swine didn’t need grazing land, just the day’s leftovers. 'Large-scale management of pigs really wasn’t possible,' says Zeder. 'The small-scale nature of pig raising became a beacon for the urban poor. It existed as a sub-rosa element of the economy.'

Over the past 6 weeks or so, I have cooked two boneless pork butts in my dutch oven. (In the USA, this cut of meat is called the "butt" because it comes from the shoulder 🤷‍♀️). I have reserved and frozen the leftover liquid. Today, I thawed it out, added an equal part water by volume, brought it to a simmer, and then froze it in this ice-cube tray. I consider this to be seasoning rather than stock because it has all of the seasoning from the butts in it.

What should I do with the leftover lard?

Bought a pork shoulder for the first time in years and slow cooked it in the oven.

Strangely enough, Mellie got more food than I did from it.

Cleaned up the bone and gave it to Mellie and in 10 minutes she devoured the whole thing leaving only a 3cm piece left.

I have enough food for 3 meals and still have the skin and the fat to mix for a couple of meals for Mellie.

Not bad for 5 euros!

Cambridge Open EngageQuantifying the impact of the food we eat on species extinctionsAgriculturally-driven habitat degradation and destruction is the biggest threat to global biodiversity, yet the impacts on extinctions of different types of food and where they are produced and the mitigation potential of different interventions remain poorly quantified. Here we link the LIFE biodiversity metric – a high-resolution global layer describing the marginal impact of land-use on extinctions of ~30K vertebrate species – with food consumption and production data and provenance modelling. Using an opportunity cost framing we discover that the impact of producing one kilogram of different food commodities on species extinction risks varies widely both across and within foods, in many cases by more than an order of magnitude. Despite marked differences in per-capita impacts across countries, there are consistent patterns that could be leveraged for mitigating harm to biodiversity. In particular, we find that animal products and commodities grown in the tropics are generally much more impactful than staple crops and vegetables grown elsewhere. We anticipate the approach and results outlined here could inform decision-making across many levels, from national policies to individual dietary choices.

Leaving Vancouver for a lil while so I thought I'd pass by my favourite comfort food place on Fraser Street (Pampanga's Cuisine) for some crispy sisig 🫣🍛🇵🇭

A delicacy I grew up with was #pork #hearts. Relatively simple farmer's food. You clean them, stuff them with #parsley and #prunes and tie them together. Fry in butter, add water, perhaps a bit of red wine, and leave to simmer for many an hour. Finally add cream to thicken the sauce and serve with #mashedpotatoes.

My carnivorous teenager hasn't tried it before, and thinks the idea is revolting. I'm hoping to win her over when it's served tomorrow. My wife and I think it's #delicious.

Pork hearts can be incredibly cheap here, compared to other meats; about €7 for 1400g. That's three hearts. Dinner for four at least.
