Mijn advies: Geniet ervan. Goede Dramaqueens zijn dun gezaaid.

Three methods strive to retain bean's flavor while removing its #caffeine:
- Carbon dioxide
- Swiss water process
- Solvent-based methods
These methods remove about 96 to 97% of caffeine.
It’s chemically impossible to dissolve only caffeine without also dissolving other chemical compounds in beans, so decaffeination inevitably removes some other compounds that contribute to aroma and flavor of your cup of coffee.

If there were a coffee shop that stayed open after 2pm but only served #decaf coffee I'd hang out there all the time.
The EPA rule does not extend to its use in pharmaceuticals and food, overseen by the Food and Drug Administration (FDA).
"Methylene chloride is commonly used to decaffeinate coffee. When applied directly to the beans, the solvent binds to the caffeine and removes it. Earlier this year, the Environmental Defense Fund petitioned the FDA to remove the chemical from the process of producing decaffeinated coffee."

A Decaf hack!
I've switched to decaf for blood pressure and health reasons, but it always lacked the sour and bitter notes I like in coffee.
Today I brewed my decaf with a little bit of brewed cacao. I find brewed cacao on its own to be too bitter and too one-note, but mixed in with the decaf, it brings in just the right complexity and makes a genuinely good cup!
It's not pure coffee and it's slightly higher caffeine than decaf, but it's far less than coffee would be, and I really like it!
I am using Crio Bru for the cacao but there might be other brands as well.

I''m struggling in a few ways as I transition to lower caffeine coffee consumption.
I notice I have a harder time finding medium roast (my preference). The beans are over-roasted, and I'm somewhat narrow in what I like.
Secondly, the brew always feels under-extracted. Maybe I'm used to the bitter/sour notes of caffeine?
I also notice that the grind is a bit finer, even with all the same settings- but online guides recommend a finer grind?
Any advice?
Why does the decaf never taste as good to me? Even when it's good quality. Coffee or tea. Can I actually taste the caffeine, or can my brain associate the caffeine hit with a drink, such that, after I've had the decaf a couple of times IT KNOWS and tells me it's not as tasty?
Has anyone studied this?
(And I say this as a person who has a long history of both loving tea and coffee and having a low caffeine tolerance.)
