I think you are posing that in the wrong way, as a moral challenge.
I am vegan but I note that if those who are not reduced their farm animal based meat consumption by 90%, that would achieve the same desirable outcome.
The *principle* of not eating meat is a different matter. They don't need to buy into that in order to address climate change.
