@anna_lillith thanks, here's the recipe
arepas made with cornmeal, vegetable shortening, water and salt. Flatten and heat on both sides in medium hot skillet approx 3-5 minutes per side. I don't measure for the arepas, but they should be moist enough to flatten without the sides cracking.
Tofu Feta
1/2 block firm tofu drained
1/4 c. e.e. olive oil
4 tsp lemon juice (1/2 lemon)
zest of 1/2 lemon
1TBSP apple cider vinegar
1½ tsp sea salt
1/4 tsp onion powder
1 tsp dried basil
1/2 tsp dried oregano
sprinkle of dried parsley
Drain xnd squeeze tofu, crumble into bowl or container. mix all ingredients except parsley together and stir to coat tofu.
let stand in fridge 1-2 hours
Sprinkle parsley on top and serve.
