Weird Swedish tradition: Today is the day of the Annunciation, when Mary was told that she was going to give birth to Jesus. In Swedish this day was called "Vårfrudagen" = the Day of Our Lady ".
If you pronounce that sloppily you end up saying "våffeldagen" =waffle day instead.

Now it can be told: The secret to extremely light, light as a cloud, and also very crispy #waffles, is lots and lots of egg whites, whipped and folded in.

The secret to making those waffles somewhat tasteless is to forget to add the vanilla.

So yah, pretty sold on Egg White #Waffles as the best kind, just now. It's as close as I've gotten to the platonic waffles in my head.

Might try reintroducing a single yolk next time, but I'm pretty convinced it's the yolks that are preventing them from being really light like a cloud, which this last batch truly was. Going to try butter instead of oil next time, but there's nothing with with the oil, still got that crispy flavour, and I think this is a case where less fat may actually better.

Leftover mash tater waffles with ched. It is very important when doing potato waffles to have good binders, but especially, to let those binders cook without opening the iron. You can see the first set to the right of one pic, and they are a mess. Leaving them alone for the full 5 mins gave excellent results.

edit: it is agreed, this is our favorite waffle so far.

2c mash
1/4c flour
2 eggs
salt & pepper
whip above
~1/2c grated ched, mix in
5-6 mins on the iron w/ spray

Canadian twist: recipe calls for "pearl sugar" which is sugar in gravel-sized chunks apparently. It is not in any of our country grocery stores, so I'm using dehydrated Maple Sirple instead.

edit: By the way, if you want to know when you've got a waffle problem, one sure sign is that you have found the websites that sell customized waffle makers.

Results not too bad. Waffles are like pizza and sex after all.

Today's waffles are Mochi waffles, made with mostly rice flour. The recipe I tried used about 2:1 Mochiko to AP, will have to try using only rice flour another time.

This recipe is crispier and more chewy. The ones out of the mini iron are very close to cookies.

This all is making me want a thin iron such as you'd make waffle cones with.

I am very aware that I am abusing #waffles as a coping mechanism btw.

We had a lovely evening with friends last night and brought dessert. I knew there were some limitations due to allergies, so in the thinking process I chose to go with super simple truffles/mini torte balls. And then @WTL suggested the seasonal favourite homemade Belgian waffles.
